Anyway...what do you do with your bananas when even the green ones on the special bunches have ripened and are too soft to retain their banana like shape anymore, and there isn't really enough butter to make banana bread because you (and by you, I mean 'me'), seriously underestimated how much butter a crew of 4 would get through in 3 weeks (750g so far, if they get through the next 500g it'll be dry bread and water)...?

Crush digestive biscuits in the bottom of a glass (plastic), I used the bottom of the citrus reamer - it did a good job and let's face it, it's not getting used much for squeezing limes for dark and stormies at the moment.

Mash bananas (if too soft to slice), layer on top of biscuits, layer on some caramel, (invert the caramel and banana layers if you like - whatever floats your boat) and top with Greek yoghurt (or cream if you prefer).

Banoffee pie in a glass in seconds.
