Rosana John will be one of the speakers at the CTO’s Sustainable Tourism Conference in Grenada this month.

Rosana John is an Attorney-at-Law in Dentons Delany’s Grenada office. She holds a Master’s Degree in Environmental Law and Policy from UCL, which she pursued through a Chevening scholarship.

Rosana heads the Environmental Social Governance (ESG) and Sustainable Finance Practice of Dentons Delany, a law firm that serves 14 jurisdictions in the Caribbean. Dentons Delany is the first law firm in the Caribbean to be a member of the UN Global Compact and has provided legal support to several sustainable projects in the region, such as the Nature Conservancy’s Blue Bond in Barbados.

ESG remains largely unregulated in the Caribbean region, therefore Rosana advises her clients on global best practices to ensure they remain at the forefront of sustainable business strategies.

Beyond her legal endeavors, Rosana is a passionate advocate for community-based tourism. As the Co-founder of Spice Foodie Tours, she aims to showcase the vibrant culinary landscape of the island, with a special focus on its rural regions. The @spice.foodie.tours  have garnered widespread popularity among locals in search of hidden culinary gems.

Every year on the Friday after Easter, Saraka (also spelt Saraca) is held in River Sallee, St. Patrick.

This year we joined @spice.foodie.tours which included:

- @riversrum distillery tour
- Visit to Lake Antoine
- Drinks stop at neighbourhood bar in River Sallee
- Saraka festivities

Saraka, an ancestral tradition passed down from Africa, is a thanksgiving feast where the community gathers to share food. This includes yard fowls, pork, rice, peas, bluggoe, green bananas, cornmeal, coo coo, yams, dasheen, and more.

Prepared over firewood, the dishes are then placed on banana leaves arranged in a circle on the ground. Participants sit or kneel on the ground to partake, accompanied by entertainment from groups such as drummers, dancers and Moko Jumbie.
