If you have ever seen a Mahi Mahi fish been caught, then you have seen something very special indeed. The fish, claimed to be one of the fastest species in the water, runs through a mass of colours from green in the water, the bright turquoise spots, then transitioning to a deep mustard yellow and finally a steel gray. All happening within the thirty minutes he bites the bait.

It is a sight that I have been dreaming about since 2004 when I first saw the spectacle, but the taste of this warm water fish is even more to behold. We cast out the lines and each ordered our catch which varied from "Tuna", to 'I don't mind what we get' to a distinct "Mahi Mahi please" Our order was fulfilled by Flash, the super squid lure.

The atmosphere on board changed immediately to anticipation, excitement and screams of delight. Aidan even jumped out his bunk, after finally getting some shut eye, and Denis grabbed his camera while John hauled him in. Knife, and bottle of whiskey at the ready, I poured some alcohol into his gills and we watched the rainbow in front of our eyes.

The butter was melted in the pan before the fish was was filleted. A quick lesson in how to season fish in flour, salt and pepper and the smells had us all watering at the mouth. Writing it now, I can feel the sensation happening again.

What a way to spend an evening. What an exciting adventure. What a beautiful meal, and what great company.
